Gaza Kitchen

I was presented with a copy of the is amazing book The Gaza Kitchen for helping Zaytoun the fair trade company at the Palestine Fair.  The Fair was held at the Arab British Chamber of Commerce...... there are some great recipes in and lots of background to the Palestinian culture.

The Gaza Kitchen is a richly illustrated cookbook that explores the distinctive cuisine and food heritage of the area known prior to 1948 as the Gaza District—and that of the many refugees from elsewhere in Palestine who came to Gaza in 1948 and have been forced to stay there ever since. In summer 2010, authors Laila El-Haddad and Maggie Schmitt traveled the length and breadth of the Gaza Strip to collect the recipes presented in the book. They were also able to build on the extensive knowledge that Laila, herself a Palestinian from Gaza, had gained from family and friends throughout the years.When Laila and Maggie launched this project in 2009, they wrote:Why do we want to talk about food and cooking?Because food is the essence of the everyday. “Turmeric is one of the most potent natural anti-inflammatories available,” Horwitz states in the paper.
He went on to cite a 2006 University of Arizona study that examined the effect of turmeric on rats with injected rheumatoid arthritis. According to Horwitz, pretreatment with turmeric completely inhibited the onset of rheumatoid arthritis in the rats. In addition, the study found that using turmeric for pre-existing rheumatoid arthritis resulted in a significant reduction of symptoms.

Kitchen Garden Herbs

I have been preparing for spring and summer today with seeds sown to grow some herbs for the kitchen.  So thought I would share with you some culinary ideas from the four herbs sown today.  

Lemon Basil; Sweet Marjoram; Italian Parsley and Greek Oregano

 Lemon Basil and Arugula Pesto

"There are so many variations on pesto these days. This one stands out from the pack with a peppery fresh lemon flavor that is both refreshing and unforgettable. Melding the summery flavors of lemon basil with spicy arugula, fresh lemon zest, and just a touch of lemon juice, this is a pesto that's half Italian tradition and half citrus sunshine. It enhances your favorite pasta perfectly, but it also works as a zippy sauce for salmon, chicken, or flank steak."
INGREDIENTS
  • 1 cup lemon basil
  • 1 cup arugula
  • 1/4 cup parmesan cheese, grated
  • 1/2 cup pine nuts
  • 1 tsp. lemon zest
  • 1 tbsp. fresh lemon juice
  • 1/2 cup extra-virgin olive oil
  • 1 tsp. kosher salt
INSTRUCTIONS
  1. Pulse lemon basil and arugula in a food processor until finely minced.
  2. Add parmesan cheese, pine nuts, lemon zest, and lemon juice. Blitz until combined.
  3. While the food processor is running, slowly drizzle in extra virgin olive oil until a thin paste forms.
  4. Add salt and process until smooth.
  5. Serve on your favorite pasta.

Sweet Marjoram

Roasted Sweet Potatoes with Fresh Marjoram

Serves 6
30 minutes or fewerMarjoram is a member of the same family as oregano, but has a milder, slightly citrus flavor. Along with sage and thyme, it’s a major seasoning component of holiday cooking and is often found in fresh herb mixes. Here, marjoram plays a starring role in a sweet potato dish that’s laced with garlic and Parmesan. If you can’t find fresh marjoram, you can substitute it with equal parts fresh thyme and oregano. Holiday prep tip: to keep peeled sweet potato cubes from browning, drop them into a bowl of water once they’re cut, then pat dry before preparing.

  • 4 medium sweet potatoes or yams, peeled and cut into ¾-inch cubes (3 lb.)
  • 2 Tbs. olive oil
  • 1 Tbs. finely chopped fresh marjoram, plus 2 whole sprigs and more for garnish
  • 4 cloves garlic, minced (4 tsp.)
  • ½ cup grated Parmesan cheese, optional
  • ½ cup chopped fresh parsley, plus several sprigs for garnish
1. Preheat oven to 450°F. Toss sweet potatoes with oil and marjoram in large bowl. Spread sweet potatoes in single layer on 2 baking sheets. Place 1 sprig marjoram atop sweet potatoes on each baking sheet; set 1 sheet on top oven rack and 1 sheet on bottom rack.
2. Roast sweet potatoes 10 minutes. Stir, switch position of baking sheets on oven racks, and roast 5 minutes more. Stir sweet potatoes again, and roast 5 additional minutes, or until browned on edges and beginning to brown evenly. Sprinkle 2 tsp. garlic over each batch of sweet potatoes, and toss to coat. Roast 5 minutes more, or until sweet potatoes are browned and crisp. Transfer sweet potatoes to serving bowl, and season with salt and pepper, if desired. Sprinkle with Parmesan cheese, if using, and parsley. Garnish with parsley and marjoram sprigs.

Italian Parsley

Tabouli
2 cups bulgur
2 cups boiling water
1 bunch Italian flat-leaf parsley
1 bunch mint
3 cloves garlic
4 tomatoes
3 scallions
juice of 4 lemons
⅓ cup olive oil
Fresh ground pepper
Salt to taste

1. Place bulgur in large bowl, add boiling water and toss well with a fork. Let rest in refrigerator for ½ hour.
2. Finely chop mint and parsley; peel and finely chop garlic. Cut tomatoes into ¼” cubes. Slice scallions finely. 
3. Add all vegetables to bulgur. Combine lemon juice and olive oil. Pour over bulgur-vegetable combination. Add salt and pepper to taste.  
4. Let flavors blend for at least two hours before serving. Serve chilled or at room temperature.

Greek Oregano

Greek-Style Grilled Chicken With Oregano, Garlic, Lemon, and Olive Oil

Eat to fight Anxiety & Depression


This may seem a little paradoxical to eat to fight depression as many time in the depression you can be in total shut down and not want to eat.

But I really can see some truths and good guidance in this article by Quentin Vennie on the MindBodyGreen website magazine.  His article is written from his experience with anxiety and depression and is entitled 

"How I eat to manage my anxiety"
As a wellness coach working primarily with people suffering with anxiety, I always encourage my clients to assess their diet. Here’s a typical day of what eating looks like for me:
I like to start my day with about 16 to 24 ounces of fresh green juice before I eat anything. It’s a great way to give my body some much needed nutrients first thing in the morning.
I typically wait about 20 minutes after I’ve finished my juice before I sit down and eat. Most mornings I enjoy fresh berries with some cage-free, organic scrambled eggs.
This is a major useful tip for the lunch on how to use all senses for the effect on your mind and the release of serotonin - the uplifting feel well neurotransmitter in the brain.
 I love to blend colors, so I tend to dress my salads with bright, colorful additions. With this salad in particular, I added some quinoa, fresh yellow and red peppers, unsweetened dried cranberries, and sunflower seeds. I topped it off with my homemade vinaigrette dressing (vinegar, fresh squeezed lemon juice, extra-virgin olive oil, salt, and pepper).In addition to quinoa being a complete protein, it also boosts levels of serotonin in the brain. It’s naturally gluten-free and also very filling. What I like most is that it’s a seed, not a grain, so it doesn’t have the inflammatory effects of other carbs, like wheat.
